Kharoset (serves 8)

This is used in the Seder ceremony, but is very tasty and may be requested as a side dish! (Be prepared
to make extra!)
1 Cup Walnut finely ground
2 Tart Apples (estimate ¼ apple per person)
2 Tbs. Passover wine or Grape Juice
2 tsp. Honey or Sugar
1 tsp. Cinnamon
Peel, core and grate apples. Add remaining ingredients, mix well and leave in the refrigerator for several
hours. The mixture will turn the appropriate shade of brown, likening it to the mortar it represents.
Carrot Tzimmes (serves 8)

1 and ½ lbs Carrots* 3 Tbs Margarine
6 Tbs Brown Sugar ½ tsp Cinnamon
¼ tsp Cloves ½ tsp Salt
½ tsp Ginger 1 Cup Water
1Tbs Lemon Juice 1 Cup Raisins
1Tbs Honey ½Tbs Orange Zest
*Baby Cut Carrots may be used, they are already peeled, washed and ready to eat are the easiest to use.
Peel and slice carrots into 1/8” slices (or use the baby carrots mentioned above). Melt margarine in a
medium-large saucepan and sauté carrots for 5 minutes. Add the sugar and water and ginger and bring
to a boil. Stir in the remaining ingredients and simmer covered for 2 hours. After 2 hours remove cover
and cook 20 minutes more. Tzimmes should be moist but not too soupy.
6 Medium White Potatoes (see note below)
2 Eggs Beaten
1 Large Onion – finely chopped
½ Cup All-Purpose (not self-rising) Flour
1 ½ tsp Salt
1/8 tsp Pepper
¼ Cup Oil
Grate the potatoes quickly so that they do not discolor. Squeeze out the excess liquid. (see note below)
Add eggs and mix well. Sift together dry ingredients. Add to potatoes. Sauté onion in oil until lightly
brown. Add both to batter. Stir well. Pour into greased baking pan. Bake at 350° until brown and crisp at
the edges about 1 hour. Serve hot.
(Note: Frozen shredded potatoes can be substituted for convenience, but they must be defrosted and
drained well.)
Any products form a PIG, i.e. Ham, Bacon etc.
Nothing with Yeast in it. (It is okay to get the above desert if it doesn't have yeast it in.)
